Welcome to the smoke show at Circle M BBQ — where old-school, whole-hog barbecue meets down-home hospitality in Liberty, SC. Our slow-smoked meats, made-from-scratch sides, and legendary sauces bring folks from all over Anderson County and beyond. Explore our menu below and come hungry!

Pulled Pork

Our whole hog BBQ is cooked the old-school way — low and slow over real hickory coals. Pulled by hand, perfectly seasoned, and served up with love. Taste it before you sauce it — you just might not need any. (Gluten free)

Beef Brisket

Our brisket is cooked low and slow over hickory coals ‘til it’s tender, juicy, and packed with smoky flavor. On Fridays, we serve up burnt ends — crispy, caramelized chunks. Saturdays, it’s all about sliced brisket, served hot and hearty.

Our chicken is tender, juicy, and full of flavor. Choose between a classic half chicken or our popular drummies — seasoned, smoked chicken legs that are perfect for finger-lickin’. We offer both so you can pick your favorite (or mix it up next time).

Spare pork ribs

Seasoned with our signature dry rub and smoked 'til tender with just the right bite — no sauce needed (but we’ve got some if you want it). Choose between a ¼ rack for a taste or a ½ rack when you’re really hungry. Either way, it’s finger-lickin’ good and fork-optional.

smoked sausage

Made right here in-house from a blend of beef and chicken. We grind it, stuff it, and smoke it ourselves so every bite is juicy, bold, and full of that real hickory goodness. This one’s quickly become a customer favorite, and once you try it, you’ll know why.

fixins

Our sides are made right here in-house — we peel the potatoes, shred the cheese, and stir up the good stuff fresh each week. From creamy to tangy to sweet, there’s a little something for every kind of BBQ plate. And yes — all of our fixin’s are gluten-free except the mac & cheese (but it’s cheesy, gooey, and delicious)

Desserts

Our dessert lineup changes each weekend, but there’s always one thing you can count on — Grammie’s banana puddin’, made just the way she always did. Beyond that, you might find brownies, cakes, cheesecakes, cobblers, or whatever sweet goodness we’re bakin’ up that week.

And on Mission Weekends (second weekend of each month), your dessert does even more — 100% of dessert sales go directly to missions we love and support.

sauces

All of our sauces are made from scratch right here in-house — no bottles, no shortcuts, just bold flavors to match the BBQ.

  • Circle M Sauce – The OG. A vinegar-pepper based classic straight from the Lowcountry. Tangy, zippy, and what our whole hog was born to be dipped in.

  • Hot Sauce – Ketchup-based with a little sweetness and a slow-building kick. If you like a little heat, this one’s for you.

  • Not Sauce – Also ketchup-based, also sweet, but no heat. Great for kids, spice-shy folks, or anyone who says “Just not too hot.”

  • Gold Sauce – A sweet mustard-style sauce with a Southern twist. Not a mustard fan? Trust us — try it anyway. You just might be surprised.
